Downside - I found out my ferritin levels are continuing to stay below optimized with my testing with @InsideTracker, so I am majorly honing in on their suggestion to increase my bean intake, but SPECIFICALLY sprouted beans, as the sprouting process increases the bioavailability of iron. ⁠

I know, I know, if you're like me, the first time @InsideTracker gave me this suggestion I was like man, that takes a lot more time and effort. Alas, I found a work around!  Sprout your beans overnight in your rice cooker (turned off), then drain and refill in the AM and set your rice cooker for when you want those beans ready for later in the day and voila! Your beans are cooked and ready to rock. Tip: Throw in some onion, garlic and salt to add some flavor!⁠

Now I am just eating my way through beans hoping I can get my ferritin levels up in time for this race at elevation!  It can take 1-3 months to change iron levels, so make sure to test well in advance of racing or training at elevation so you have enough time to get your levels up.⁠

My plan is to retest just before the race or shortly after to see where I was able to get my ferritin levels to with the regular intake of sprouted beans.⁠
